BRINGS FLAVORS OF THE MEDITERRANEAN

A. Papano’s Pizza’s principle, “You can’t make good wine from bad grapes” is proved by the sauce & dough they make by hand at each location. Known for their “fresher ingredients, better flavor and bigger value,” the crew serves up some of the tastiest pies in Northern Michigan -- at least in the opinion of Northern Express readers, who annually vote the restaurant as one of the top pizzerias around.

Started by Benzie native Todd Bruce, a refugee from franchise pizza, A. Papano’s has expanded to five locations in Beulah, Kingsley, Interlochen, Thompsonville, and the flagship store in Frankfort. Two German pizzerias started by Bruce’s exchange student brother go by the name A. American Pizza Pan, but still include the familiar Papano’s logo, as well as tuna, salami, even gorgonzola cheese.

The bacon-cheeseburger and BLT pizzas are favorites, but it’s the Mediterranean that shines, with black olives alongside the artichokes and red peppers. Top it with feta cheese and pair it with a seasoned crust (parmesan butter is this writer’s choice). It’s become one of the most popular pies in all the stores since its introduction. Throw in some three cheese breadsticks, which have received great reviews as well.

For something a little more pungent, keep the Mediterranean region in mind and try the Venetian Veggie. Swap out the marinara for some zippy pesto sauce, and add sun-dried tomato, mushroom, onion, green pepper and roasted garlic. Mixing feta into the mozzarella is a largely unknown yet underrated option.

Since its inception 20 years ago, Bruce and his cohorts have upped the ante, pizza-wise. Heading into their third decade, perhaps they’ll even head into the uncharted waters of tuna and gorgonzola.
